Holiday time for the ladies in our family meant lots of time in the kitchen surrounded by great cooks! There was one problem. I hated spending time in the kitchen and still do. I have made it my personal mission to help woman just like me find easy ways to make things that taste great with minimal effort and time.
Some of the tasty and time-consuming treats like tres leches cakes, rice pudding, and layered desserts were all made with LA LECHERA. It seemed to be a key ingredient for many of our recipes. I combined my love for tangy with this key ingredient for a recipe that takes LESS THAN 10 MINUTES to make. Something perfect for your next party or an easy dessert to take to your next event!
NO BAKE KEY LIME MINIS
1 14oz Can of LA LECHERA Sweetened Condensed Milk
8 Key Limes (Juiced)
2 8oz Blocks of Cream Cheese
1 Tbsp Lime Zest
12 Graham Crackers
Optional: Food Coloring
1. Bring the cream cheese to room temperature. This is important or the mixture will not be smooth.
2. Juice and zest the lime.
3. In a food processor crumble the graham crackers
4. Combine all ingredients (except graham crackers) and beat until smooth.
4. Separate mixture according to number of colors you will create, add food coloring, and mix.
5. Layer in individual cups.
6. Serve chilled.
***You can also make in a pre-made pie crust in under 5 minutes. BONUS– You can make the ahead of time and refrigerate overnight!
