Mole (pronounced MO-LAY) was a treat for us growing up. My mom cooked traditional Mexican recipes at home but mole wasn’t something she preferred to make. I remember going to my grandmas and eating delicious foods like chicken in mole sauce. Everything my grandma makes is delicious to this day! I guess the 10,000+ hours she has spent in the kitchen has paid off.
When I was deciding on a DOÑA MARÍA® Mole recipe idea, I wanted to create something that was reminiscent of the exquisite flavors from my childhood. But also, something quick and easy for the modern-day woman. A recipe that could be made in less than 10 minutes, with easy ingredients and that you can buy at the grocery store (no molcajete needed-lol). So, I chose a Chicken Mole Dip, a dish that could be made for any occasion.
The dip savors the flavor of a chicken mole entrée but takes less than half the time to make. I added the pineapple and jalapeno to create a sweet and spicy zing. Then finished it off with peanuts to add a little crunch.
